What a wonderful way to start the day! Ingredients:
2 tablespoons butter |
2 cups has brown potatoes |
8 eggs, slightly beaten |
6 tablespoons salsa |
6 slices peppered bacon, cooked and crumbled |
6 (10 inch) flour tortillas |
1 cup shredded cheddar cheese |
garnish: sour cream, salsa, shredded cheddar cheese |
Directions:
1. In a large non stick skillet, melt butter over medium heat on stovetop. 2. Add hash brown potatoes; saute for 6 to 8 minutes until lightly browned. 3. Add eggs and salsa; cook for 5 to 7 minutes until eggs are firm, stirring frequently. 4. Stir in bacon. 5. Evenly divide egg mixture among tortillas, leaving 1/2 inch border around edge. Sprinkle with cheese, roll up tightly. 6. Garnish with sour cream, salsa, and cheese if desired |
