2 filling breakfast tacos (that aren't just for breakfast) using only one egg, and it's a great way to get at least 2 servings of veggies, and maybe 3. I also like to add fakin' bacon on occassion, which is a nice source of soy protein. Ingredients:
3/4 cup onion, chopped |
1/2 cup red bell pepper, chopped |
1 large jalapeno pepper, chopped |
1 serrano pepper, chopped |
1 egg |
1/4 cup nonfat milk |
1 teaspoon grapeseed oil |
salt and pepper |
1 ounce cheddar cheese, grated |
2 whole wheat tortillas |
hot sauce, to taste (i use ariba hot roasted pepper hot sauce) |
Directions:
1. Saute onions and peppers in oil until soft. 2. Beat egg and milk, season with salt and pepper. 3. Pour egg mixture into sauteed veggies and scramble to desired doneness. 4. Top with cheese and let it melt. 5. Divide between two warm tortillas, add hot sauce and enjoy. 6. This will fill the tortillas up all the way, so arm yourself with napkins! 7. Notes:- You can use more or less of the hot peppers as you please. 8. I add the serranos because they tend to be hotter than jalapenos. 9. If I don't have serranos, I'll use two jalapenos. 10. -You can remove the seeds and membranes to remove most of the heat of the peppers, or leave them in if you like it hot. 11. I like it very hot, so I leave them in and use a bunch of hot sauce. |
