Breakfast Steak Quesadilla |

I made these for breakfast using leftover Fajita steak and it came out so good...Thought I'd share. Ingredients:
1 lb. steak (i used top round) marinated in fajita seasoning |
1 cup cheese, monterey jack, colby, or a mexican blend |
6 eggs |
1/4 cup milk |
hot sauce to taste (i used frank's) |
1 large onion, sliced in half rings |
1/2 tbls. sugar |
4 flour tortillas, fajita size |
butter |
salt and pepper to taste |
olive oil |
salsa |
sour cream |
Directions:
1. Cook steak to medium in whatever manner you desire, grill, broil, or pan fry 2. Cover and let rest 3. In large saucepan heat olive oil 4. Add onion to pan 5. Add sugar, salt, and pepper and cook on low until caramelized, about 20 minutes 6. Beat eggs, milk, and hot sauce 7. In another pan, heat olive oil to medium low 8. Scramble eggs 9. Cover to keep warm 10. In large fry pan, melt butter 11. Add tortilla 12. Cover with half the cheese, half the onion, half the steak, and half the eggs 13. Cover with another tortilla 14. Use something to weigh it down 15. Let cook until slightly brown 16. Flip, cook other side 17. Repeat with remaining ingredients 18. Serve with salsa and sour cream on the side |
