From South Beach Cookbook Ingredients:
1 cup egg substitute |
1/4 cup sweet red pepper, diced |
1/4 cup green onions, sliced |
1/4 cup (1 ounce) low-fat cheese, grated |
10 ounces frozen spinach, drained |
Directions:
1. Mix eggs, peppers, onion, and spinach, well drained, in bowl. Add cheese, a dash of pepper sauce, salt and pepper to taste. Bake for 20 minutes at 350 degrees, or until firm (25-30 minutes) 2. Can use any combination of appropriate vegetables. 3. Freezes well. |
