Why not try these for breakfast or brunch??? Ingredients:
2 flour tortillas |
4 large eggs |
2 tablespoons milk |
kosher salt |
ground black pepper |
2 tablespoons cilantro, chopped |
2 tablespoons butter |
2 ounces sun-dried tomatoes, julienne cut |
1/2 cup grated monterey jack cheese |
2 tablespoons sour cream |
Directions:
1. Preheat oven to 350F degrees. 2. Wrap the tortillas in foil and warm them in oven. 3. Whisk eggs, milk, salt, pepper and 1 tablespoon of cilantro in bowl. 4. Melt butter in large nonstick skillet over medium-low heat. 5. Add eggs and cook, stirring until scrambled firm. 6. Add sun-dried tomatoes and cook for 1 minute more. 7. Spoon eggs down center of each tortilla. 8. Top with cheese and sour cream. 9. Fold tortilla. 10. Sprinkle with remaining cilantro, and serve. |
