Started with C C Angus beef steak tips to develop a good Great Lakes area breakfast sausage for Hilldale Farmers Market. Modified from original Homemade Breakfast Sausage by Montana Heart Song Ingredients:
2 lbs ground beef |
2 teaspoons sea salt |
1/2 teaspoon ground sage |
1/2 teaspoon black pepper |
1 teaspoon cinnamon |
1/4 cup warm water |
1 teaspoon brown sugar |
1 teaspoon maple syrup |
1 tablespoon flour |
Directions:
1. Mix ground meat, spices and herbs in large bowl. 2. In warm water, add brown sugar and maple syrup, stir to mix well. 3. Add to ground meat and mix well. 4. Place in refrigerator for 30 minutes to chill. 5. Form patties. Can use a round egg mold and saucer to make uniform size. 6. Fry in heavy skillet on medium heat. Brown both sides. 7. Pack each patties in plastic wrap and freeze. 8. Reheat in pan and serve with egg scramble or dice and add to scramble. 9. OPTIONS and/or SUBSTITIONS:. 10. 1 samll onion, fine diced. 11. 2 garlic cloves, minced. 12. 2 tablespoons cilantro. 13. 2 tablespoons fresh chives. 14. 1/2 tsp dried basil. 15. 1/2 tsp dried oregano. 16. 1/2 tsp ground cayenne. |
