Good low-carb quick breakfast. Make ahead of time and freeze. Ingredients:
2 cups egg beaters |
2 cups frozen chopped spinach |
1/2 onion, sliced |
1/2 cup mozzarella cheese, shredded |
1/2 tsp. hot sauce |
Directions:
1. Microwave spinach and onion until spinach is thawed and onion softened. 2. Combine all ingredients in large bowl. Season with salt and pepper if desired. 3. Bake in muffin tin at 375 for 20 minutes. 1 serving equals 2 muffins. |
