Low- carb, easy breakfast food (no crust) Ingredients:
9 large eggs |
9 egg whites |
1 box frozen spinach |
1/2 cup shredded cheese - 2% milk reduced fat - mild cheddar |
1/2 cup chopped onions |
1 salt and pepper to taste |
Directions:
1. Preheat oven to 350. 2. Microwave frozen spinach about 4 1/2 min. Drain well. 3. Crack eggs in a large bowl, remove up to 9 yolks if desired. Mix spinach with raw eggs, cheese, and onions. Spray 2 pie plates with cooking spray. Put 1/2 of mixture each glass pie plate. Bake 20 -30 minutes. Cool, cut each quiche into 8 slices. |
