Breakfast Pockets

This is the breakfast I fix on weekday mornings when we are rushing to get to work. It is great! I eat mine after I get to work. My husband eats his on the way.
Ingredients:
3 eggs
1 egg white
1 tablespoon water
4 small slices canadian bacon
dash of salt
pepper to taste
1 oz reduced fat sharp cheddar, shredded
1 pita round
Directions:
1. In a small bowl with a wire whisk beat together eggs, eggwhite, water, salt & pepper.
2. preheat lightly coated non-stick skillet over medium heat.
3. Scramble eggs and remove to a plate while eggs are still a little glossy. Top with the shredded cheese while still hot.
4. Place Canadian bacon in the hot pan to warm.
5. Cut pita round in half. Put half ot the eggs into each pita pocket
6. Slip Canadian bacon into side of pocket.
7. Enjoy.

9. I wrap mine in a paper towel and then in foil to take it to work and it is still very good when I get there!
