This is my variation of a basic breakfast pizza. If I make these for a group, in one sitting, I will individualize them with the optional ingredients. If I make up a bunch to freeze for weekday reheats, I stick with the basics because I don't like how the optional ingredients reheat. Read more . :) Ingredients:
6 individual pizza crusts, or 2 medium(home made or store purchased) |
for gravy sauce |
4t bacon grease or butter |
5t flour |
2 cups milk |
kosher or sea salt and fresh ground black pepper |
for toppings |
1lb breakfast sausage |
6 eggs |
1 cup+ shredded cheese, shredded(colby, cojack, pepperjack, cheddar, provolone, mozzarella, etc. most should work fine) |
*optional ingredients include: chopped onion, bell pepper, tomatoes, jalapenos, crisp bacon, etc) |
Directions:
1. Prebake crusts for a few minutes til JUST starting to brown if making to eat right away. 2. If you are making them ahead to freeze, you can skip this step. 3. For Gravy Sauce 4. In heavy medium sized skillet(I use cast iron), melt bacon grease or butter over medium heat. 5. Add flour and stir to coat flour with the fat. 6. Cook 1-2 minutes, stirring constantly(a whisk works best) 7. Slowly add milk, whisking constantly, until well combined. 8. Lower heat and cook and stir until desired consistency(you want this a thick gravy so it will stay on the crust, so hold back a little of the milk, if you want, until cooked and add more, if too thick :) 9. Season with salt and pepper and set aside 10. For Toppings 11. Brown breakfast sausage in heavy skillet until done. 12. Drain, rinse, and set aside 13. Beat eggs together lightly and scramble in same pan you just cooked the sausage in until done and fluffy. Season with salt and pepper. Set aside. 14. (if using additional veggie toppings, I cook them with the sausage :) 15. To Build Pizza 16. Spread gravy sauce over crust 17. Top with sausage, eggs, then sprinkle with shredded cheese. 18. Bake per baking directions on crust recipe, or package or freeze prior to baking and reheat in oven from frozen. (if you want these for microwave reheating, then DON'T skip the prebaking the crust step :) |
