I haven't made this yet, but it sounds so yummy! Like the kugel desserts I've had, only a touch healthier...I'm putting it here for safe keeping.
Ingredients:
12 ounces wide egg noodles
1 apple, diced
1 pear, diced
1/4 cup raisins
1/3 cup prune, chopped
2 tablespoons smart balance butter spread
1 cup egg substitute
1 cup nonfat cottage cheese
1 tablespoon honey
1/2 teaspoon cinnamon
Directions:
1. Preheat oven to 350 and spray a 9 x 13 dish.
2. Cook and drain noodles. Place into large bowl.
3. Add fruit and Smart Balance, mix well. Add remaining ingredients.
4. Spoon into prepared dish, and bake 35-45 minutes.
