I haven't made this yet, but it sounds so yummy! Like the kugel desserts I've had, only a touch healthier...I'm putting it here for safe keeping. Ingredients:
12 ounces wide egg noodles |
1 apple, diced |
1 pear, diced |
1/4 cup raisins |
1/3 cup prune, chopped |
2 tablespoons smart balance butter spread |
1 cup egg substitute |
1 cup nonfat cottage cheese |
1 tablespoon honey |
1/2 teaspoon cinnamon |
Directions:
1. Preheat oven to 350 and spray a 9 x 13 dish. 2. Cook and drain noodles. Place into large bowl. 3. Add fruit and Smart Balance, mix well. Add remaining ingredients. 4. Spoon into prepared dish, and bake 35-45 minutes. |
