This is a tasty muffin for breakfast or for brunch.... Company will really like these.... Ingredients:
3 cups cooked long grain rice |
1 cup shredded cheddar cheese, divided |
1 can chopped green chilies, drained (4 oz) |
1 jar diced pimientos, drained (2 ounches) |
1/3 cup milk |
2 eggs |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. In a large bowl, combine rice, 1/2 cup cheese, chilies, pimientos, milk, eggs, cumin, salt and pepper. 2. Spoon into 12 greased muffin cups. 3. Sprinkle with remaining cheese. 4. Bake at 400 degrees for 15 minutes or until eggs are set. 5. 12 muffins... |
