Sometimes simpler is better. A great breakfast side dish.
Ingredients:
2 tbls. butter
1 tbls. olive oil
red potatoes, diced and parboiled
1 small onion, chopped
2 cloves garlic, finely chopped
salt and pepper to taste
Directions:
1. In skillet, add butter and oil: heat to medium
2. Add remaining ingredients
3. Fry, turning often until golden brown
4. When plated, I love a dash of hot sauce (optional)
