This was a something I threw together using leftover ingredients from Christmas dinner. We always have veggie trays and leftover ham each year. I wanted to spice it up a little with my morning eggs. So this is the product. Read more . My Dad always likes bread with his fried eggs so that he can soak up the yoke. This meal does the job for you. Hope you enjoy it. Ingredients:
1 slice of red bell pepper - chopped |
1 grape tomato - chopped |
1 green onion - chopped |
1 slice of leftover ham - chopped |
small handful of shredded cheddar cheese |
1 slice of bread - toasted |
1 egg |
salt |
pepper |
Directions:
1. Place a little butter in a skillet heated on medium heat 2. Saute veggies and ham until slightly softened.Season with salt and pepper. Place in a bowl and set aside. 3. Place slice of bread in toaster. 4. While toasting, fry egg to desired doneness. I usually go for over easy. I like my yoke runny. 5. Plate toasted bread, top with egg, then ham and veggie mixture. Top with shredded cheese. 6. Then dig in! |
