Hearty morning eye-opener! Ingredients:
1 lb sausage (as spicy or mild as you like) |
2 cups new potatoes, peeled and chopped |
2 ounces red peppers, chopped |
2 ounces sweet onions, chopped |
6 eggs |
1 fluid ounce table cream |
Directions:
1. Crumble sausage into large skillet. 2. Add potatoes, peppers and onion, and cook over low heat until sausage is browned and potatoes are fork-tender, stirring occasionally. 3. Drain off any drippings. 4. Whisk eggs and milk in small bowl until blended. 5. Add to sausage mixture; scramble until eggs are set but not dry. 6. Serve hot, and refrigerate leftovers. |
