BREAKFAST HAM RING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Jarvis Estate in Frisco, Texas in 2007.
Ingredients:
10 eggs
1 pound fully cooked ground ham
1 pound bulk pork sausage
1-1/2 cups soft bread crumbs
1/2 cup milk
2 tablespoons dried parsley flakes
1 tablespoon prepared horseradish
Directions:
1. Beat 2 eggs then add ham, sausage, bread crumbs, milk, parsley and horseradish and mix well.
2. Press into a greased 6 cup ring mold and bake at 350 for 1-1/4 hour.
3. Towards end of baking prepare scrambled eggs with the remaining eggs seasoning as desired.
4. Remove ring from oven and drain juices then unmold onto serving platter.
5. Fill center with scrambled eggs and serve immediately.
