This recipe came from our local newpaper insert. The original author is Kathie Junker from Lafayette, Tenn. I gave it a try and I love this cereal so much it is all I eat for breakfast now. It's great mixed with low-fat vanilla yogurt. I mixed in some cinnamon and it makes a great recipe even better. Ingredients:
8 cups old fashioned oats |
1/2 cup olive oil |
1 tablespoon olive oil |
1/2 cup honey |
1 tablespoon honey |
1 tablespoon vanilla extract |
2 teaspoons cinnamon (optional) |
1/2 cup almonds |
1/2 cup walnuts |
1/2 cup pecans |
1/2 cup raisins |
1/2 cup dried cranberries |
1/2 cup dried cherries |
Directions:
1. Preheat oven to 325 degrees. Measure oats into a extra large bowl. Mix together oil, honey, vanilla, and cinnamon (optional). Pour over oats and mix well to coat. Spread in a single layer on a baking sheet. Bake 30 minutes, turning and stirring every 10 minutes. Add nuts after the first 10 minutes. 2. Remove from oven; cool completely. Stir in dried fruits. Store in airtight container. 3. Serve with milk, yogurt, or cover a ripe banana with peanut butter and roll in granola. |
