This is a flavorful change of pace for breakfast, a Mexican-inspired scrambled egg and tortilla dish.
Ingredients:
8 corn tortillas
1/2 onion, diced
1 clove garlic, diced
1/2 green pepper, diced
4 slices bacon, crispy and diced
4 mushrooms, sliced
2 serrano peppers, diced
2 stalks cilantro, chopped
3 eggs, scrambled
salt (may be omitted as bacon is very salty)
1 tomato, diced
2 t. olive oil
topping
1 c. chedder or jack cheese, grated
Directions:
1. Cut tortillas into small pieces and stir-fry in olive oil until golden brown.
2. Add all items, except for the eggs and cheese, and salt to taste; toss until veggies are semi-tender.
3. Add scrambled eggs and cook with other ingredients. Stir-fy all ingredients until heated through, and top with grated cheese.
