This is a flavorful change of pace for breakfast, a Mexican-inspired scrambled egg and tortilla dish. Ingredients:
8 corn tortillas |
1/2 onion, diced |
1 clove garlic, diced |
1/2 green pepper, diced |
4 slices bacon, crispy and diced |
4 mushrooms, sliced |
2 serrano peppers, diced |
2 stalks cilantro, chopped |
3 eggs, scrambled |
salt (may be omitted as bacon is very salty) |
1 tomato, diced |
2 t. olive oil |
topping |
1 c. chedder or jack cheese, grated |
Directions:
1. Cut tortillas into small pieces and stir-fry in olive oil until golden brown. 2. Add all items, except for the eggs and cheese, and salt to taste; toss until veggies are semi-tender. 3. Add scrambled eggs and cook with other ingredients. Stir-fy all ingredients until heated through, and top with grated cheese. |
