This a a good hearty recipe for breakfast or brunch and its perfect for company because you can put it together the night before and bake it off in the morning. Ingredients:
3 cups frozen hash browns, thawed (in a pinch,you can also used tator tots, just chop them up!) |
6 slices bacon (you can used 1-1/4 cup diced ham or canadian bacon if you prefer) |
5 eggs |
3 green onions, minced |
3/4 cup milk |
2 cups grated sharp cheddar cheese |
salt |
pepper |
tabasco sauce (optional) |
Directions:
1. Preheat oven to 350. 2. Grease 9 inch glass pie pan. 3. Cook bacon and crumble, reserve bacon fat in pan. 4. Beat together eggs, milk, green onions 1-1/2 cups cheese, salt,pepper and tabasco to taste. 5. Mix in all but 1/4 cup bacon. 6. Fry hashbrowns in bacon fat for a few minutes and cool ,then add to egg mixture and mix until combined. 7. Pour into pie plate and bake 35-40 minutes,or until middle is set. 8. Sprinkle remaining cheese and bacon on top. 9. Return to oven until cheese is melted. 10. Serve with tabasco on the side. |
