You can use diced ham, cooked bacon or suasages. This came from Fast, Easy And Delicious Recipes Gluten Free Breakfast. Ingredients:
1 lb sliced bacon or 1 lb ham, diced |
1 medium onion, diced |
6 eggs, lightly beaten |
4 cups frozen hash brown potatoes, thawed |
2 cups shredded cheddar cheese |
1 1/2 cups small curd cottage cheese |
1 1/4 cups shredded swiss cheese |
Directions:
1. In a large frying pan, cook bacon and onion until bacon is crisp; drain. 2. Combine the remaining ingredients in a bowl then add bacon and onions. Transfer to a greased 13x9x2 -inch baking dish. 3. Bake, uncovered, at 350 for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting. |
