Great for Sunday morning brunch or those breakfast for supper evenings. Easy/fast to make and easily adaptable to your own taste. Ingredients:
1-1/2 lbs chorizo |
1 med onion |
1 packet taco seasoning |
8 large eggs |
approx 8 tbs of chopped fresh cilantro |
1-cup salsa |
flour tortillas |
shredded mexican cheese |
sour cream |
Directions:
1. Crumble Chorizo in large skillet 2. Mix in Taco Seasoning and brown thoroughly 3. Add Onions and Saute until tender (about 2 minutes) 4. In a medium bowl, whisk eggs, cilantro, and salsa. Season with salt and pepper 5. Add egg mixture to Chorizo and stir until eggs are softly set. 6. Remove from heat. 7. Warm Tortillas in microwave (as instructed on package) 8. Serve Rolled with Cheese, Sour Cream and hot sauce. |
