2 large tortillas
1 bunch scallions diced
1 medium bell pepper diced (red or yellow)
1/4 lb sliced mushrooms
1/2 cup sour cream
grated cheese (optional)
3 eggs
Directions:
1. Add the scallions, green pepper, and mushrooms and saute in a greased pan
2. add eggs .
3. Stir the contents of the pan to mix as it cooks.
4. Add the mixture to tortillas and top with sour cream.
