This is based on the burritos I used to enjoy from the Campus Kitchen back when I lived in Collegedale. If you use your own gravy (maybe you want to use real sausage?), plan on about 1/3 cup per burrito. Ingredients:
10 flour tortillas |
10 eggs |
2 1/2 cups tater tots |
2 cups cheese, shredded |
8 ounces vegetarian sausage patties |
1/4 cup flour |
3 cups milk |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook the tater tots. (They can bake in the oven while you prepare the rest of the components.). 2. Heat the sausage patties and crumble or chop them into coarse chunks. 3. Combine milk and flour in a large bowl. 4. Add salt, pepper, and sausage to the mixture and heat in a pan over medium-high heat, stirring occasionally, till it gains some thickness (about three to five minutes). 5. Meanwhile, scramble the eggs in a separate pan. 6. Divide eggs, tater tots, gravy, and cheese among the tortillas and roll them up. |
