It's all in the eggs..... Ingredients:
3 lbs potatoes |
3 tablespoons olive oil |
salt |
pepper |
8 large eggs |
1 cup cheddar cheese (shredded) |
1/4 cup bacon (chopped) |
4 (8 inch) flour tortillas |
Directions:
1. 1. Peel and cube potatoes. 2. 2. In a large frying pan add 2 tablespoons olive oil and heat up, add potatoes and salt and pepper. Cook through stiring often but gently. Once done set aside. 3. 3. Fry eggs to over-easy/meadium in remaining olive oil (I also salt and pepper the eggs), remove from pan and cut up the eggs with a fork. 4. 4. On a tortilla spead 1/4 of the potatoes in a line down the center, add two of the chopped up eggs on top of potatoes, sprinkle with bacon bits and cheese. 5. 5. While tortilla is still open microwave on high for 30 seconds to melt the cheese and warm the tortilla, roll up and serve. |
