Breakfast Burrito With Green Beans |

This is based on Dienia's great Breakfast Burrito With Green Beans (my photos are there, BTW. I also made mine gluten free with Wheat Belly Tortillas (okay, I switched this from my original Rice Flour Tortillas. Ingredients:
2 tablespoons extra virgin olive oil |
1/4 cup onion, chopped |
1 cup cauliflower, cooked and finely chopped |
6 eggs |
1/2 cup no-salt-added green beans |
1/2 cup cheese, shredded (optional) |
2 tablespoons cilantro, chopped |
4 gluten-free tortillas |
Directions:
1. Saute onion in olive oil until translucent. 2. Add chopped cauliflower to onion. 3. Remove from pan. 4. Scramble eggs and pour into pan; cook slow. 5. Add drained green beans. 6. Add onion mixture. 7. Heat tortillas. 8. Divide egg mixture onto tortilla. Sprinkle chopped cilantro over. Make burrito. 9. Serve with salsa. 10. Add cheese while cooking if you want. |
