Breakfast Burrito With Green Beans |

I had this in the '70's in El Paso. It tastes great; sounds weird I know but tastes great. Ingredients:
3 tablespoons butter |
1/4 cup onion, chopped |
1 potato, cooked |
6 eggs |
1/2 cup french style green bean |
1 cup cheese, shredded (optional) |
4 flour tortillas |
Directions:
1. Saute onion in butter until translucent. 2. Dice cooked potato into small pieces; add to onion. 3. Take out of pan. 4. Scramble eggs. Pour into pan; cook slow. 5. Add drained green beans. 6. Add onion mixture. 7. Heat tortillas. 8. Divide egg mixture onto tortilla; make burrito. 9. Serve with salsa. 10. Add cheese while cooking if you want. |
