I make this a lot in the morning before he leaves for work. It's easy and yummy! Ingredients:
4 ounces chorizo sausage |
1/2 red onion, chopped fine |
3 garlic cloves, crushed |
4 ounces green chilies, chopped |
1/2 cup cilantro leaf, chopped |
1 cup egg substitute (i use egg beaters) |
4 corn tortillas |
1/2 cup low-fat cheddar cheese, shredded |
Directions:
1. Spray a skillet with some cooking spray to ensure that nothing sticks. Break the chorizo into small pieces and cook until they're done. There's usually a bit of grease, so I drain that right away. 2. Add in the onion, garlic, chiles, and cilantro. Saute until the onions are soft, which is usually about a minute or two. Add in the egg subsitute and scramble everything together. 3. I put the tortillas in the toaster oven to warm then up. Once they're done put the egg mixute in them, towards the center. I sprinkle the cheese over that, thenr oll them up! |
