Breakfast Bread And Butter Pudding |

An easy to make, really yummy and filling breakfast Ingredients:
12 slices bread, crusts removed & lightly buttered |
1 glug olive oil, for frying |
3 chorizo sausages, or other spicy sausages, cut into chunks |
250 grams brown mushrooms |
300 grams vine tomatoes, or cocktail tomatoes |
1 pinch salt and milled pepper |
2 tbsp thyme leaves |
1 cup milk |
4 extra large eggs, beaten |
Directions:
1. Preheat oven to 180ÂșC 2. Spray a 20 - 25cm ovenproof dish with a non stick agent or use butter 3. Cut bread into triangles and overlap slightly in dish 4. Heat a glug of oil in a pan and lightly fry chorizo and mushrooms 5. Scatter over bread and allow to fall between slices 6. Dot with tomatoes, season and sprinkle with thyme 7. Beat milk and eggs together and pour over bread. Allow to stand for 10 minutes or until bread soaks up liquid. 8. Bake for 30 minutes or until egg has set. Serve. |
