This is an easy, tasty, and very filling breakfast treat. You can adjust the recipe to include canadian bacon, or turkey sausage. When I am at my ideal weight, I also use two eggs instead of 4 egg whites. Be creative and enjoy!
Ingredients:
4 egg whites
1 potato chopped
1 dash salt
1 dash pepper
1 oz mozzarella cheese shredded
1 tbls salsa
Directions:
1. Dice potatoes and place on cookie sheet coated in cooking spray.
2. sprinkle with Salt and Pepper
3. Bake the diced potatos in an oven on 400 degrees for about 20 minutes or until potatoes are golden brown and soft inside.
4. about 10 minutes before potatoes are done, preheat skillet for eggs.
5. Separate eggs, and beat the whites until bubbly.
6. Spray skillet with cooking spray and heat for a minute or two.
7. Add eggs to skillet and scramble.
8. When eggs are just about done, add potatoes and toss.
9. Sprinkle with cheese, and allow cheese to just melt.
10. Slide on to a plate and enjoy with a slice whole grain toast.
11. Top with Salsa
12. **If you add canadian bacon or turkey sausage, heat those in the skillet before adding the eggs.
