Breakfast Banana-Nut Bread

This recipe is adapted from the book Feed Me I'm Yours, an excellent book of toddler friendly recipes! This recipe turned out fabulous, Hubs and kiddos loved it! Plus it's healthy too!
Ingredients:
1/4 cup butter or 1/4 cup margarine
1/2 cup brown sugar
1 egg, beaten
1 cup old-fashioned oatmeal
1 1/2 cups mashed bananas (i used 3)
2 teaspoons vanilla
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup macadamia nuts
2 tablespoons flax seed meal
Directions:
1. Combine sugar and butter until creamy.
2. Add egg, mix well.
3. Add oatmeal, bananas, and vanilla.
4. Combine remaining ingredients in a seperate bowl, and then add to banana mixture until just moistened.
5. Prepare a loaf pan with cooking spray & flour.
6. Pour in batter.
7. Bake in 350 degree oven for 1 hour or until tester comes out clean.
