This is a delicious casserole that is fluffy and light. Freezes well. Great for lunch or dinner too. Ingredients:
4-1/ c seasoned croutons |
2 c (8 oz) cheddar cheese,shredded |
1 mmedium onion,chopped |
1/4 c sweet red pepper,chopped |
1/4 c green pepper (chopped) |
1 jar (4-1/2 oz) sliced mushrooms drained |
8 eggs |
4 c milk |
1 tsp salt |
1 tsp mustard,ground |
1/8 tsp pepper |
8 bacon strips,cooked and crumbled |
Directions:
1. Sprinkle croutons,cheese,onions,peppers and mushrooms into 2 greased 8 square baking dishes. 2. In a bowl,combine eggs,milk,salt mustard and pepper. 3. Slowly pour over vegetables. 4. Sprinkle with bacon 5. Cover and freeze 1 casserole for up to 3 monts. 6. Bake the second casserole,uncovered,at 350 degrees for 45-50 mins or till knife in center comes out clean. 7. To use frozen csserole: 8. Completely thaw in the refrigerator 30 mins before baking. 9. Bake,uncovered at 350 degrees for 50-60 mins or till knife in center comes out cleaan. 10. 2 casseroles (6-8) servings each. |
