A yeast roll variation on traditional Boston Brown Bread. Simple to make in a bread machine, using the dough setting. No bread machine? See end of directions for making this by hand. Ingredients:
2 cups whole wheat flour |
1 cup yellow corn meal |
1/2 cup bread flour |
3 tbsp dry buttermilk powder |
1 tsp baking soda |
3/4 tsp salt |
2 tbsp brown sugar |
2 tsp active dry yeast |
1/2 cup dark molasses |
1 cup warm water (100 degrees) |
1 egg |
Directions:
1. Use bread machine on dough-only setting. Measure all liquid ingredients into bread machine pan. Add in brown sugar and salt. 2. Add flours, corn meal, buttermilk powder, and soda on top of wet ingredients. Do not stir. Make a well in dry ingredients and spoon in yeast. 3. Operate bread machine according to manufacturer's directions on dough-only setting. When finished, remove dough and knead in a little bread flour if necessary to make a smooth dough. 4. Divide dough into 16 balls. Place dough balls into greased muffin cups. Let rise in warm place for 60 minutes. Bake in preheated 350-degree oven about 25-30 minutes. |
