From Dorothy Horn's Real Guamanian Recipes By Way Of Dorothy's Kitchen.
Ingredients:
1 egg
1 cup ripe breadfruit, uncooked and mashed
2 tablespoons shortening
1 cup flour
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon salt
3 teaspoons baking powder
1/2 cup sugar
oil (for frying)
Directions:
1. Beat the egg in a bowl and add uncooked breadfruit pulp and shortening.
2. Mix well.
3. Sift dry ingredients together and add to the egg/pulp/shortening mixture.
4. Mix well.
5. Preheat your frying oil to 370°F.
6. Drop by spoonfuls into oil and fry until golden brown.
7. Drain on paper towels.
8. Shake in a bag with sugar to coat outside.
