This is a variation of a recipe I got off of here. I changed it around just a little. It's really great. I actually got my boyfriend to eat fish, so that's always a good sign. Ingredients:
5 tilapia fillets |
1 1/2 cups breadcrumbs |
1/2 cup parmesan cheese (grated) |
1 tablespoon fresh parsley (chopped) |
1 tablespoon all purpose greek seasoning |
2 tablespoons olive oil |
1 egg |
2 tablespoons milk |
salt |
pepper |
4 grape tomatoes |
Directions:
1. heat olive oil in medium to large pan (around medium heat, depending on gas/electric). 2. combine breadcrumbs, cheese, parsley, greek seasoning, salt, pepper into shallow dish. 3. mix milk and egg in another shallow dish. 4. put fish in milk and egg mix; then dip in breadcrumbs. 5. cook roughly 3-4 mins on each side. 6. towards the end of the fish being done; quarter grape tomatoes; sprinkle a bit more of the Greek seasoning if necessary. 7. Serve and enjoy! |
