Ingredients:
tomato-basil relish |
4 (6-ounce) grouper or perch fillets (1 inch thick) |
1/8 teaspoon salt |
cooking spray |
2 (1-ounce) slices white bread, toasted |
2 tablespoons chopped fresh basil |
1 tablespoon chopped fresh parsley |
1 tablespoon olive oil |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
2 garlic cloves, minced |
4 lemon wedges |

Directions:
1. Prepare Tomato-Basil Relish; set aside. 2. Preheat oven to 425°. 3. Sprinkle fish with 1/8 teaspoon salt; place on a baking sheet coated with cooking spray. 4. Place bread in food processor; process until coarsely ground. Combine breadcrumbs, basil, and next 5 ingredients in a small bowl. Spoon breadcrumb mixture over fish, pressing lightly to coat. 5. Bake at 425° for 15 minutes or until fish flakes easily when tested with a fork. Serve with Tomato-Basil Relish and lemon wedges. |
