a great healthy version of panfried chicken; great for tenders too - punch it up by making your own honey mustard dipping sauce. Ingredients:
112 g r.p.c. boneless skinless chicken breast sngl |
1/8 cup plain breadcrumbs |
1/4 egg |
1/2 tbsp extra virgin olive oil |
1/8 tsp salt |
1/8 tsp black pepper |
1/2 tbsp thyme |
Directions:
1. Mix breadcrumbs with salt, pepper, and thyme leaves. 2. Lightly beat the egg. 3. Dip chicken breasts in the egg, and coat in breadcrumb mixture. Shake off excess. 4. Add extra virgin olive oil to pan over medium-high heat. 5. Cook chicken in pan, untouched, for 3 minutes. 6. Turn over and cook other side, another 3-4 minutes, or until done. |
