BREADED BARTLETT PEAR SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fish Estate in Abilene, Texas in 1998.
Ingredients:
1/3 cup extra virgin olive oil
1/4 cup freshly squeezed lemon juice
2 teaspoons chopped fresh parsley
1 clove garlic minced
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
salad
1/2 cup all purpose flour
1/4 teaspoon salt
1/4 teaspoon ground white pepper
1/4 teaspoon paprika
3/4 cup seasoned dry bread crumbs
1/4 cup extra virgin olive oil
4 eggs lightly beaten
4 ripe bartlett pears cored and quartered
4 cups vegetable oil for frying
6 ounces prosciutto sliced very thin
4 cups mixed baby field greens
2 teaspoons aged balsamic vinegar
Directions:
1. In large mixing bowl combine olive oil, lemon juice, parsley, garlic, kosher salt and pepper.
2. Whisk until well blended then cover and refrigerate several hours to meld flavors.
3. In small shallow bowl combine flour, salt, white pepper and paprika then set aside.
4. In another shallow bowl toss bread crumbs with olive oil then set aside.
5. Dredge pear quarters in seasoned flour then dip in beaten egg then drain off excess.
6. Roll in crumb mixture then preheat oil in deep fryer to 350.
7. Fry pears 2 pieces at a time until golden then drain on paper towels
8. Whisk vinaigrette again and toss greens with half the dressing.
9. Arrange prosciutto on 4 salad plates then mound greens in center of plates.
10. Warm with warm pear quarters then drizzle remaining vinaigrette over salads.
11. Sprinkle with pepper then drizzle balsamic over top.
