A simple light meal of breaded, lightly seasoned baked tomatoes. A revision of Broiled Tomatoes Ingredients:
3 -4 medium tomatoes |
1 -2 cup breadcrumbs |
1 -2 teaspoon asafetida powder (to taste) |
pepper |
salt |
butter or vegetable oil |
Directions:
1. Lightly grease baking pan. 2. Core tomatoes and cut them in half, place in pan. 3. Apply seasonings evenly and sprinkle chili on tomatoes if so desired. 4. Drizzle tomatoes with oil or butter. 5. Cover tomatoes liberally with breadcrumbs. 6. Bake at 425 for 20-30 minutes. 7. Serve with cous cous or rice. |
