Bread Salad With Tomatoes |

A great taste before a nice Italian main dish. Ingredients:
1/2 of a small baguette |
1 large clove garlic, peeled |
4 tbs. olive oil |
6 medium to large ripe tomatoes or heirloom tomatoes, cut into |
large chunks and placed in a colander over a bowl |
1/2 cup chopped green onions |
3 tbs. fresh sweet basil, rolled and chopped |
1/4 cup balsamic vinegar |
1/2 cup olive oil |
salt and pepper, to taste |
bibb lettuce |
Directions:
1. Slice baguette in half lengthwise. Rub the bread with the peeled garlic clove and brush on the 4 Tbs. olive oil. Slice into croutons and place on a baking sheet, crust side down. Bake in a 300 degree oven til nice and golden, about 30 minutes. 2. Drain any accumulated juice from the tomatoes and place them in a dry bowl. Add the croutons, onion and basil. Mix the vinegar and oil; season to taste with salt and pepper. Toss with salad. Serve on leaves of Bibb lettuce. Do not mix til right before service. |
