A vegan bread salad perfect for taking to pot-lucks. The longer it sits around, the better it gets, and no one will miss the meat! Ingredients:
1 cup olive oil |
2 tablespoons balsamic vinegar |
1 cup tomato juice |
dried basil to taste |
salt and pepper to taste |
1 (1 pound) loaf day-old bread, cut into 1 inch cubes |
1 (7.5 ounce) package smoked tofu, diced |
2 large tomatoes, diced |
2 cups chopped fresh spinach |
Directions:
1. In a large bowl, whisk together the olive oil, balsamic vinegar, tomato juice, basil, salt, and pepper. Toss with the cubed bread, tofu, tomatoes, and spinach just before serving. |
