A versatile bread that can use up leftovers and really impress!! Quick, easy and inexpensive, it can be adapted to your particular tastes... I love a pumpkin, sundried tomatoes and feta combination... Ingredients:
5-6 old bread rolls, or 300g old bread - roughly chop |
375g warm low fat milk |
3-4 eggs |
50-100g smoky bacon, salami or whatever |
2 tbspns chopped parsley |
2 onions (chop finely) |
salt, pepper, chili and nutmeg to taste |
Directions:
1. Put bread pieces in a bowl 2. Mix egg and milk together and pour onto bread 3. Saute onion with bacon and parsley 4. Add to bread mix with spices 5. Knead well 6. With wet hands, shape up a loaf and place on greased tray 7. Bake for 25 mins 8. Cut in thick slices and serve with soup, steak and salad, casseroles... Great in lunchboxes too |
