Here's a light, simple recipe, for those times when you don't feel like cooking Ingredients:
1/2 loaf italian bread, cut in cubes |
2 ripe tomatoes, cut in cubes |
1/2 cup extra virgin olive oil |
1 tbl balsamic vinegar |
1/4 cup chopped fresh basil |
salt and black pepper to taste |
Directions:
1. In large bowl, combine bread and tomato cubes. In seperate bowl, mix oil, vinegar, basil, salt and pepper. Add this dressing to bread mixture, and toss lightly. Let stand 15-20 minutes, to allow flavors to intermingle, and toss lightly again. Serve with side dish of freshly grated Parmesan for sprinkling. |
