from Helen Jones My favorite! I love these - a part of every Thanksgiving and Christmas dinner. Ingredients:
4 quarts cucumbers, sliced |
6 white onions, sliced |
1 green pepper |
1 sweet red pepper |
3 garlic cloves |
1/3 cup salt |
1 1/2 teaspoons turmeric |
1 1/2 teaspoons celery seeds |
2 tablespoons mustard seeds |
5 cups vinegar |
6 cups sugar |
2 cups water, frozen in ice cube trays |
Directions:
1. Wash cukes but do not peel. Slice thin. 2. Add sliced onions, peppers cut in narrow strips; add garlic cloves, sprinkle the salt over the layers as you work. 3. Now mix a tray of ice cubes through the pickles, put another full tray on top. Let stand 3 hours. 4. Drain cucumber mixture thoroughly and discard ice. 5. Combine vinegar sugar and spices. Pour over cucumber slices. 6. Heat to boiling point. Pour in hot sterilized jars and seal in boiling water bath. Age before using. Yield 6-7 pints. |
