This recipe is from my MIL's family. I'm not a fan of sweet pickles but my mom really likes these. Ingredients:
25 -30 cucumbers |
8 large white onions |
2 large bell peppers |
1/2 cup salt |
5 cups vinegar |
5 cups sugar |
2 tablespoons mustard seeds |
1 teaspoon turmeric |
1/2 teaspoon clove |
Directions:
1. Wash the cucumbers and slice thinly. Chop the onions and peppers and combine with the cucumbers and salt. Let the mixture stand for 3 hours and drain. 2. Combine the vinegar, sugar and spices in a large pot and bring to a boil. 3. Add the drained cucumbers and heat but do not boil. 4. Pack in canning jars and seal at once while still hot. |
