Ingredients:
2 bunches collard greens
2 tablespoons extra virgin olive oil
1 tablespoon butter
1 large shallot, minced (about 1/3 cups)
2 cloves garlic, minced
kosher salt, to taste
ground pepper, to taste
Directions:
1. Cut the tough end stems off the collards.
2. Rinse the leaves and gather them together into 2 piles.
3. Take each pile and roll it tightly. Cut them into thin strips crosswise. You should have about 8 cups.
4. Heat the oil and butter in a large, heavy skillet over medium heat. Sauté the shallot with the garlic, stirring often, until they are lightly browned, about 3 minutes.
5. Add the greens and salt and pepper.
6. Cook, stirring often, for about 5 minutes or until the greens are tender but bright green.
7. If necessary, cover with a lid and cook an additional couple of minutes to tenderize the greens
