Brazilian Style Black Beans |

Brazils national dish(Feijoada) was the inspiration for this dish. Ingredients:
saute in 1tbs. olive oil |
1/4c. onion,sliced |
1/4c poblano,seeded,diced |
1tbs. garlic,minced |
stir in |
1c canned black beans,drained,rinsed |
1/4c chicken broth |
1/4 c fresh orange juice |
off heat,add |
!/2 c mandarin oranges,drained |
1/2c cherry tomatoes,halved |
1 tbs. chopped fresh cilantro |
juice of 1/2 lime |
salt and pepper to taste |
Directions:
1. Saute onion,poblano, and garlic in oil in a large saute pan over med-high heat for 3 mins. 2. Srir in beans,broth,and juice. Bring to a boil and cook until liquid is nearly evaporated,2 minutes. Off heat,add remaining ingredients. Serve immediately. |
