The meat will be extremely tender and will have the flavor of the chorizo or linguicia (or any other sausage that you decide to use). Chorizo and lingucia are spicy Portugese sausages. A milder type of sausage can also be used. Ingredients:
1 pork roast |
1 pk chorizo or linguicia, remove from skin and break in pieces |
3 t white vinegar |
1 large green and 1 large red pepper, sliced thin |
2 garlic cloves, minced |
water |
5 medium potatoes, peeled and cut in chunks |
3 large carrots, peeled and cut in chunks |
3 small onions, peeled and quartered |
1 large can stewed tomatoes |
Directions:
1. Preheat oven to 350 degrees. 2. Place the pork roast in a roasting pan and put pieces of the chorizo or linguicia on and around it. 3. Add the vinegar, peppers and garlic to the roasting pan. 4. Add water until roast is halfway covered. 5. Cover and bake 1 to 1 1/2 hours. 6. Remove cover and add the potatoes, carrots, and onions. 7. Cover and let bake another 15 minutes or until the carrots are tender, (but not mushy). 8. Remove cover; top with stewed tomatoes and bake 20 minutes, uncovered, to brown the top of the roast. |
