Brave Chocolate Rum Mousse |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Patrick Estate in Canton, Texas in 1981. Ingredients:
1/4 cup granulated sugar |
4 tablespoons rum |
1/4 pound semisweet chocolate melted over double boiler |
2 egg whites |
2 cups whipped cream |
Directions:
1. Combine sugar and rum then stir into melted chocolate until smooth. 2. When mixture is cool but not chilled fold into it stiffly beaten egg whites then gently fold in whipped cream. 3. Chill in sherbet glasses at least 2 hours before serving. |
