2 lbs lean pork |
1 lb pork fat yum yum |
1 1/4 lb pork liver |
1 med onion diced |
2 tbl salt |
2 tea cloves |
1 tea blkj pepper |
1/2 tea allspice |
1/2 tea nutmeg |
cut into cubes- freeze for 2 hours |
saute onions in a little pork fat-sprinkle with spices- add to pork- process--till you have a smooth puree. |
Directions:
1. pack puree into earthinware baking dish or 2 9x5 - loaf pans- cover tite with tin foil 2. put in a dish with 2 inchs of water-boiling- 3. and bake at 300 degrees untill meat is cooked not browned- 4. therometer 160 - 165 degrees about 2 hours 5. remove the dish from the water and let the dish cool 6. refrigerate for 1-2 days before using |
