Very elegant, very good! This is an easy recipe for a romantic dinner. You could also put the shrimp on picks for an appetizer. Ingredients:
1 cup chicken broth |
3 tablespoons chopped shallots |
1 cup whipping cream |
4 tablespoons brandy |
1/2 cup unsalted butter, cut in cubes and softened |
4 teaspoons lemon juice |
1/4 teaspoon white pepper |
2 lbs large shrimp, peeled and deveined |
1 tablespoon vegetable oil |
1 tablespoon snipped fresh chives |
Directions:
1. In saucepan combine broth and shallots. 2. Bring to a boil; reduce heat. 3. Simmer, covered for 3 minutes. 4. Stir in whipping cream and brandy. 5. Simmer, uncovered for 10 minutes, or until reduced to 1 cup. 6. Add butter, one piece at a time, whisking well. 7. Stir in lemon juice and white pepper. 8. In skillet, saute shrimp in oil for 4 minutes. 9. Add sauce; heat through; sprinkle with chives. |
